Skip the chips and mediocre dip - these watermelon, feta and basil skewers will make perfect pre-dinner appetisers next time your entertaining. They're a delicious combination of sweet refreshing watermelon and salty creamy feta, which balance one another out perfectly, while the addition of fresh basil and zingy lemon makes these really special and will transport your taste buds to somewhere along the Mediterranean coast. Best yet they're really easy to make! You can whip up a tray pretty speedy, and they'll look way fancier then expected for the time and effort invested. These would be gorgeous to serve up a on summer eve's (I write this sadly in Autumn) during a BBQ or an outdoor dinner where the sun is setting and it's warm and balmy.
Watermelon is a lovely refreshing fruit - it contains a high percentage of water (around 91%) and so each bite offers hydration, making it a quintessential fruit to enjoy during warmer weather. It's high in vitamin C, an antioxidant that helps combat free-radical damage in the body and assists with keeping our immune system in tip-top shape. It's also a good source of the mineral potassium, which is important in blood pressure control, and lycopene, another powerful antioxidant which helps boost our bodies defense system. Fun fact: aside from its antioxidant activity, lycopene is also responsible for the lovely red hue of watermelon, along with other red foods like tomatoes, grapefruit and guava.

Watermelon, Basil and Feta Skewers
1 block of feta cheese
Fresh basil leaves
1. Cut watermelon into small cubes (around 3cmx3cm). Squeeze a little lemon juice over each cube.
2. Cut feta into small cubes (around 2cmx2cm).
3. Top each piece of cubed watermelon with a cube of feta and a single basil leaf. Secure with a tooth pick.
