I'm convinced this is the best way to eat porridge. If you love porridge you must try it. If you don't, again, you must try it and see if it converts you. It's that good!
Porridge is a real comfort food. It's so soothing and nourishing, especially when early mornings are chilly and you wrap your hands around a warm bowlful. Eating it is almost like giving yourself an internal hug. Although a plain lumpy bowl may appear boring and bland, with a few tasty additions porridge turned into something really magic.
In this recipe this magic starts while you cook it on the stove - instead of just garnishing your bowl with delicious toppings, you add in extras while the oats are simmering on the stove - that being, mashed banana and a big dollop of peanut butter - and then give it a stir, letting all the flavours fuse together as it cooks. The end result is a deliciously creamy bowl of goodness, with a lovely natural sweetness from the banana, and a nutty kick from the peanut butter.
Aside from being an energising breakfast option, oats are also a wonderful source of fibre, which acts like an internal broomstick, helping to clear our bowels. Their high fibre content has other perks too - a bowlful will help keep you feeling satisfied between meals, which is great for weight management.
Banana and Peanut Butter Porridge
Ingredients:
1/3 cup quick oats
1 cup milk of choice
1 medium banana
1 tbsp chia seeds
1 tbsp peanut butter
Extras to top: peanut butter, sliced banana, nuts, seeds or shredded coconut
Method:
1. Mash half the banana with a fork until smooth.
2. Place your oats and milk on the stove on a high heat. Stir the pot over the heat, and as soon as it starts to bubble (within a few minutes or so), turn it down to simmer, stirring gently.
3. Add in your mashed banana, chia seeds and peanut butter. Stir well. Let the oats cook for another few minutes, stirring regularly. If you're finding it's getting too thick for your liking, add a splash more milk!
4. Once the porridge is lovely and smooth take off the stove, and serve topped with the extra sliced half banana and a few extra garnishes.
