A rather cheeky take on the classic mint chocolate chip ice cream combo, this smoothie is both nutritious and super delicious - it has me totally reminiscent of kiwi summers and single scoop mint chocolate chip ice-cream from the dairy!
The lovely minty green colour is from a handful of both fresh spinach and mint. Green veggies are truly a food our body loves, and they should always make a regular feature within our daily diet (yes, each and every day!). They're absolute nutritional powerhouses, brimming with essential vitamins and minerals, fiber, phytochemicals and disease-fighting antioxidants that are all highly protective in health and against disease. Enjoy them in as many ways as you can - boiled, raw, steamed, roasted, stir-fried, grilled, or this case - smoothie form!

Mint Chocolate Chip Green Smoothie
1 frozen ripe banana (peeled, sliced into coins, frozen)
Handful of fresh spinach
Small handful of fresh mint
1 tsp pure maple syrup/honey
1 cup of milk of choice
Small handful of ice cubes
Few drops of peppermint essence (or to taste)
Dark chocolate shavings/cacao nibs to garnish
Optional: 1/4 avocado for extra creaminess
1. Add spinach, mint leaves and milk into a blender and blitz until smooth.
2. Add the rest of the ingredients (except the garnish) and blend again until smooth.
3. Top with the dark chocolate shavings/cacao nibs and enjoy!
