Aren't bliss balls just so tasty and...blissful?
These chocolate peanut butter bliss balls are the most delicious pick-me-up treat. Made with a combination of nutritious nuts, seeds, coconut, and naturally sweetened with juicy sultanas and medjool dates, they will satisfy any sweet tooth, while still providing nourishment. Each little ball is a nutrient-dense blend of protein, healthy fats and belly-loving fibre, and offer a concentrated source of energy to the body - stick to 1-2 balls as a serving.
One of the best things about these is that they're really easy to make! You just throw everything into a food processor, push the on-button, and let the machine do the hard work. Within a little time the mixture will begin to form a dough, which can then be rolled into tasty little balls.
These would be a nice lunchbox treat for the kids (given they don't attend a nut-free school), as an energy booster before a gym session or as an afternoon snack at work.
Chocolate Peanut Butter Bliss Balls
Ingredients
1/2 cup peanuts
1/2 cup shredded coconut
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup sultanas
12 medjool dates
3 tbsp peanut butter
2 tbsp cacao/cocoa powder
Optional: extra toppings - shredded coconut, pumpkin seeds or cacao powder to roll in.
Method
1. Add all of the ingredients (apart from the extra toppings) into a food processor. Process for 2 minutes.
2. Add a few teaspoons of water and process again until the mixture balls up into a dough.
3. Roll tablespoons of the dough into balls. If you'd like you can coat each ball in various toppings of your choice e.g. cacao powder, pumpkin seeds or shredded coconut.
4. Store in fridge (will keep well for a week) or freezer (for months).
